Paleo Chocolate Pudding Filled Cupcakes

The biggest problem with paleo desserts is that they turn out dry and crumbly. These cupcakes solve the problem by incorporating pudding into the center of the cupcake.

2 cups coconut flour
1 cup tapioca flour
1/3 cup chocolate
1 cup milk or coconut milk
6 eggs
1 teaspoon cinnamon
1/2 cup honey
3 tablespoons molasses (optional)
1/2 teaspoon salt

1 teaspoon baking soda

1/3 cup butter or coconut oil

One batch of chocolate pudding (find recipe under desserts)


Combine all dry ingredients then add wet ingredients. Mix well until there are no clumps. Scoop batter into a greased or lined muffin pan, leaving a little space at the top. Take a spoon make a little crater in the cupcake. Fill the hole with pudding. Cover with another layer of cupcake. Bake at 350 degrees for about 20 minutes or until the tops are firm.IMG_20140921_191814_355 IMG_20140921_192340_377
